Miyabi knives combine a rich Japanese tradition and German engineering. Sophistication is in every detail of this knife: from the blade to the handle design, knife lovers with a penchant for high quality and aesthetics will get their money’s worth.

The Shotoh, the name means something like “small knife”, is used in Japanese cuisine for peeling and cutting fruit and vegetables. Thanks to the ergonomic shape of the handle made of black pakka wood, the kitchen knife is always comfortable to hold.

The blade was sharpened with the Honbazuke trigger on a wet whetstone. In this classic Japanese knife manufacturing process, the blade is sharpened and polished in three steps, giving the blade an extremely sharp edge thanks to its fine surface. The CRYODUR blade was hardened in a special hardening process for multi-layer steel, the result: Extraordinary hardness and edge retention with high flexibility.

The knife owes many of its properties to its manufacturing site Seki, which has been known for high-quality forged goods since the 14th century: sharpness, precision and outstanding aesthetics.
